About Jillian Glenn
I'm Jillian Glenn, but you can call me Jill! I am the author of 'Easy Low-Cal Vegan Eats' Light & Easy Vegan Baking, and Healthy Vegan Breakfasts and Lunches. My blog, Peanut Butter and Jilly, is a place where I share my family-friendly, healthy, and tasty recipes along with my best health, wellness, travel/dining, and product tips! I am passionate about wellness and believe our mental, spiritual, and physical health is essential to living our best lives. I eat plant-based because it has transformed the way I feel and I share my recipes and tips to try to help others feel their best too!
A bit more about me, I am a follower of Christ and believe that doing all things with love is the most important thing in the world. When I am not busy baking and cooking to develop new recipes for you guys, I can often be found working out, studying my bible, crocheting, spending time outdoors, reading, traveling with my fiance, and creating memories with my friends and family.
Education
I attended Georgia State University for three years before completing my Bachelor's Degree in Business Administration with a focus in Marketing (BBA) online at Georgia Southwestern State University.
Jill's Easy Vegan Recipes
When I first started following a plant-based diet, I would search for vegan recipes online. The problem I ran into was that I had never heard of many of the ingredients, many were highly processed, and I wasn't even sure where to buy them! Many of the recipes were long and time consuming. Hardly any of them were gluten-free friendly! And it was hard to find recipes that were both low calorie and nutritious! So, I started coming up with my own recipes. I tried to make them super easy, affordable, and use "normal" ingredients like oatmeal and almond milk!
I loved showing my family and friends that being vegan or gluten free doesn’t mean boring, complicated, or tasteless. That's how Peanut Butter and Jilly was created! My recipes are family-friendly, simple, yummy, and lighter versions of the crave-able foods we all love. The home-cooked meals I grew up loving inspire my many of my recipes. And, I've got a serious sweet tooth so there's never a shortage of baked goods.

I've had the honor of publishing three vegan cookbooks with Page Street Publishing! All of my cookbooks include exclusive recipes only found inside the book, easy-to-follow instructions, simple and affordable ingredients that can be found anywhere, focus on minimally processed foods, are low to moderate in calories, and taste amazing! Each book has an image along with nutritional info!

My second book, Light and Easy Vegan Baking, is one that is close to my heart. This is a best selling book, selling thousands of copies and includes delicious vegan bakes that are all super delicious! Every recipe is gluten-free friendly and clocks in under 300 calories per serving.
Healthy Vegan Breakfasts and Lunches
My latest cookbook is my personal favorite! It includes 60 recipes that are all vegan and gluten-free friendly! Each recipe is under 400 calories and I've included macro nutritional info for each meal! From smoothies and oatmeal, to pancakes, protein donuts, soups, salads, and sandwiches - this book contains simple and nourishing meals that are delicious and satisfying!

Jillian Glenn's Diet
I believe health and happiness go hand in hand! The number one reason I decided to follow a plant-based (and mostly gluten free) diet was for health reasons. When I became vegan, my energy levels balanced out, my digestive issues disappeared, and I felt aligned with my food and body more than ever! I'm certified in nutrition and believe that a plant-based diet is the most nourishing diet (if you do it right).
I follow the 80/20 or 90/10 "rules". Basically, I consume 80-90% fruits, vegetables, healthy fats, complex carbs, nuts, and seeds. 10-20% consists of a sweet or savory vegan and gluten free treat! Life is short ... I never skip dessert! I love creating comfort food recipes with healthier swaps. Examples are baking with oatmeal instead of flour, maple syrup instead of cane sugar, and cauliflower rice or quinoa instead of white rice.
