- 1 cup canned pumpkin puree
- 1 cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gf flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
Cinnamon Sugar Topping
- 2 teaspoon cinnamon or pumpkin pie spice
- ½ cup organic cane or coconut sugar
- ¼ cup melted vegan butter

How To Make Two-Ingredient Pumpkin Bagel Bites
- Mix the pumpkin puree and flour together until a thick dough forms. The dough will be thick so you may need to use your hands to work it together completely.
- If the dough seems dry and and the flour won't fully combine, work another 1-2 tablespoon of pumpkin puree into the dough. Alternatively, if the dough seems too wet to roll into balls, you may need to add another 1-2 tablespoon of flour.
Air-Fryer Instructions
- Heat an air fryer to 375. Use your hands to form the dough into balls. Place the balls of dough at the bottom of an air fryer and air fry for 7-8 minutes. You will know they are done when the outside if hard, they have "puffed" a little, and the inside is tender.
Oven Instructions
- Preheat the oven to 375. Line a baking sheet with parchment paper.
- Use your hands to form the dough into balls. Place the balls of dough onto the lined baking sheet and bake in the oven for 7-8 minutes. You will know they are done when the outside is hard and lightly browned and the inside is tender.
Cinnamon Sugar Topping
- While the pumpkin bagel bites bake, add the vegan butter into a small microwave safe bowl and heat in the microwave for about 30 seconds - until it's completely melted. In a separate bowl, add the cinnamon (or pumpkin pie spice) and sugar, mix. Once the bagel bites are done baking, let them cool for 2 minutes and then toss them into the melted vegan butter and then immediately into the cinnamon sugar. Enjoy!

Success! Love how simple this is and so quick in the airfryer. Experimented with the sizing (smaller is better, like 1 inch balls) and may try adding vanilla next time and more spices!
