Instructions
Coffee Cake Banana Bread
- Preheat the oven to 375. Grease a metal loaf pan with non-stick baking spray.
- In a medium or large mixing bowl, use a fork to mash the overripe bananas. Add the melted vegan butter, vanilla, sugar, almond or oat milk, baking soda, and baking powder to the bowl. Mix until smooth, then add the flour and mix until a thick batter forms.
- Transfer half of the batter into the greased loaf pan. Evenly sprinkle brown sugar on top of the batter. Then, evenly sprinkle cinnamon on top of the batter. Pour the remaining batter on the top of the loaf.
- Next, make the cinnamon streusel topping by mixing the melted vegan butter, cinnamon, brown sugar, and flour in a small mixing bowl. Sprinkle the crumble over the top of the banana bread and bake in the oven for 50-55 minutes or until you can insert a toothpick into the center of the loaf and it comes out clean.
