The cashews in this recipe make it so creamy with a hint of nutty flavor which pairs perfectly with the garlic and roasted tomatoes! For added protein, top it off with some sautéed tofu!

- Cashews & Water: To make this pasta as creamy and dreamy as possible without using dairy, you'll want to boil raw cashews until they are nice and tender.
- Cherry Tomatoes: I like using fresh cherry tomatoes to roast. You can use other tomatoes, but keep in mind that the sauce might come out a little more watery depending on the water content of the tomato.
- Garlic: Fresh garlic cloves will be roasted along with the tomatoes.
- EVOO: Extra virgin olive oil will coat the tomatoes and add necessary flavor.
- Pasta: You can use regular pasta or gluten-free pasta depending on your needs!
How to Make Vegan Cream Tomato Garlic Pasta
Step 1: Begin by preheating your oven to 400. Add the tomatoes, garlic cloves, and olive oil to the cocotte or other oven safe baking dish. Roast the garlic and tomatoes for 30 minutes or until it's fragrant and golden.
Step 2: While the tomatoes and garlic roast, bring a small saucepan with cashews and 1 cup of water to a low boil. Cook for about 25-30 minutes or until the cashews are tender. Once the cashews are tender, pour the water and cashews into a blender. Set aside.
Step 3: While the garlic and tomatoes roast and the cashews boil, bring a medium saucepan with water to medium heat. Add the pasta, a small drizzle of oil oil, and a pink of salt to a boil. Cook as instructed on the packaging.
Step 4: Once the pasta reaches the desired consistency, strain the pasta over a large bowl so that you can save the pasta water. Set both the pasta and the pasta water aside.
Step 5: Once the tomatoes and garlic are done roasting, remove them from the oven.
Step 6: Pour the entire contents of the tomato and garlic mixture into the blender along with the cashews. Add about ½ cup of pasta water to the blender and blend until creamy. If the sauce is too thick to blend, add another ¼ cup of pasta water until you reach desired consistency. The tomato garlic pasta sauce should be silky and creamy.
